Okay, maybe these dishes are not typical for spring, but I was getting in a cooking rut, and these dishes seemed to be in order.
Monday: Salmon (marinade with horseradish, soy sauce, and maple syrup for at least an hour) and rice, kimchee soup (beef broth, kimchee, mushroom, tofu)
morning glory oat muffins
Tuesday: Kryie's pinto beans with Mexican rice (she has several gluten-free recipes)
Wednesday: Chicken biryani with yogurt sauce (plain yogurt, minced garlic, chopped cilantro and mint)
coconut cookies (halved the sugar)
Thursday: homemade pizza
Friday Parmesan meatballs and spaghetti (After reading Frances and Jam, Cheeky insisted on eating this)
Saturday: Parmesan meatballs and rice
Sunday: Chicken Parmesan, garlic mashed potatoes, and for the first time--potato rolls
*These potato rolls taste great with hot dogs. Applefarms' organic uncured beef hot dogs were surprisingly good. Dan, you should give it a try!

Ooh, chicken biryani? Nice! I hope you can throw on the spices/peppers at some point soon.
I've had some form of potato buns for hot dogs before, but I haven't had (m)any(?) dogs that could be labeled organic and uncured. Less salty, perhaps?
I did add peppers to the recipe to make it more spicy :)
Actually, the hot dog was still on the salty side. What I really liked was the skin...I must credit you for making me love dogs in my thirties after detesting them my whole childhood.
