I miss Tapas Barcelona. I've been thinking of some of their tapas before I go to sleep. Especially their Ensalada Caprese. It's just tomatoes, fresh mozzarella, basil, and balsamic vinegar. Can't be hard, right? This Food Network recipe seems okay. And so does this Reluctant Gourmet's.
But I never bought fresh mozzarella before. Does it have to be buffalo? Is there a specific brand that tastes good? And what brand of balsamic vinegar? Reluctant Gourmet recommends a $50 or $100 balsamic vinegar. That seems out of my league. You know me. I'd rather waste my money on Montessori equipment or some organic skin product. Is there a cheaper but still tasty brand? It's a bloody shame that my Cook's Illustrated Online subscription expired. You foodies out there, help me out!
And if you're ever in the Evanston area and you decide to visit that restaurant, I also recommend their Datiles Con Tocino (recipe here) and their Filete Con Patatas (grilled sirloin with roasted potatoes, onions, and red wine sauce).

I ADORE mozzarella cheese! I think it's just the cows milk one I buy.
I was reading through my cook books the other night and came across fried mozzarella cheese sandwiches (2 slices bread with crusts removed, sliced mozzarella in the middle, seal the bread edges together, fry!!! mmmmmmmm)

Get fresh moz. from the deli counter and buy the oldest balsamic available at the supermarket. If you're using it for salad you only need a small bottle for drizzling and it should run you about $20.
Go to deli counter and you can buy the chez. It comes in a ball or you can find it in the chez isle. Plum tomatoes are great and buy a package of basil. You can also but Balsamic vinegar dressing that does not cost that much. I usually can make a couple of salads and spend less than $10 once you have the dressing.
