Pumpkin pie

After having kids, I've experienced a whirlwind of firsts. Today, it was baking pumpkin pie from an actual sugar pumpkin because for some reason, my kids really wanted me to make pumpkin pie. I don't normally like pumpkin pie, but I tried this recipe, and it is seriously delicious. I followed a lot of the tips and used coconut oil in place of shortening, and since I only had on can of evaporated milk, I substituted the other half with raw cream. The girls helped out to scoop out the flesh from the rind and mash all the pumpkin with the potato masher.  Next year, we am going to try pumpkin cheesecake. If only I was diligent about produce from our own garden. I didn't cook one single eggplant this summer even though we had a lot.

Thanks for the heads up! It's unpredictable sometimes. Once I showed K a Magic School Bus video on space. Sounds harmless, right? Well, when the kids get to Pluto, one of the kids do not want to leave so one of the cousins decide to take his helmet to show what happens in Pluto. His head froze which terrified both of us. It was so unexpected. K does not want to go near Magic School Bus again and doesn't want to read the books either. Every children's movie should come with warnings.
